Bacon Ranch Potato Salad

  • 3 pounds red potatoes
  • 6 slices bacon ( crumbled)
  • 3/4 cup mayo
  • 1 1/4 cup sour cream
  • 2 tbsp ranch seasoning mix
  • 1/2 tsp garlic powder
  • 4 green onions
  • 1 tbsp fresh chopped parsley
  • 1 tbsp fresh chopped chives
  • salt/pepper

Boil water with some salt

Cook potatoes about 15 to 20 mins or until you can pierce with fork and it goes through

Cook bacon and crumble it

Chop green onions

In a medium bowl mix everything else together and add in cooled off potatoes ( make sure they are fairly cooled so your cheese does not melt!!!)

Put in fridge for 3 hours before serving!
