Southern Potato Salad

  • 3 lbs russet potatoes (peeled and cubed)
  • 2 tsp kosher salt
  • 4 hard boiled eggs
  • 1/2 cup hamburger dill pickles
  • 2 tbsp hamburger dill pickle juice
  • 1/2 cup vidalia or sweet yellow onion (finely minced or grated)
  • 1 cup mayo (Hellmans)
  • 1/4 cup yellow mustard
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • dash paprika (for garnish)

Boil water and add in a dash of salt. While the water is boil in a large pot, peel and cube the potatoes.

Cook 15 mins or until a fork pokes through, drain the water.

Combine everything else with the potatoes and mix well. Garnish with paprika
