- 3 lbs russet potatoes (peeled and cubed)
- 2 tsp kosher salt
- 4 hard boiled eggs
- 1/2 cup hamburger dill pickles
- 2 tbsp hamburger dill pickle juice
- 1/2 cup vidalia or sweet yellow onion (finely minced or grated)
- 1 cup mayo (Hellmans)
- 1/4 cup yellow mustard
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
- dash paprika (for garnish)
Boil water and add in a dash of salt. While the water is boil in a large pot, peel and cube the potatoes.
Cook 15 mins or until a fork pokes through, drain the water.
Combine everything else with the potatoes and mix well. Garnish with paprika
