Red Velvet Cupcakes with Cream Cheese Frosting

Cupcakes 

  • 1 egg
  • 1 cup sugar (granulated)
  • 2/3 cup buttermilk
  • 1/2 cup canola oil
  • 2 tbsp vanilla Greek yogurt
  • 1 tbsp vanilla
  • 1 1/2 cup flour ( all purpose)
  • 3 tbsp cocoa powder
  • 3/4 tsp baking soda
  • pinch of salt
  • 2 tbsp of red food coloring

Cream Cheese Frosting

 

  • 1/2 cup cream cheese (softened)
  • 2 tbsp unsalted butter (softened)
  • 1 tsp vanilla
  • 2 to 2 1/2 cups powdered sugar
  • splash of milk

Preheat oven to 350. Line cupcake pan with liners or grease well. Mix the 1st 6 ingredients of the cupcakes up until the vanilla! Everything else whisk together in a medium bowl. Combined and blend well. Scoop with an ice cream scoop 3/4 cup batter into each cup. Bake 20 mins or until toothpick comes out clean. Cool completely!

Make frosting while cakes are in oven. Beat the butter and cream cheese , add vanilla and then add powder 1/2 cup at a time until fully creamed together. Add splash of milk and finish blending! Put frosting into a Ziploc and pipe onto cupcake.
