- 4 eggs
- 1 2/3 cup sugar
- 1 cup canola oil
- 1 can (15 oz) pumpkin
- 2 cups flour
- 2 tsp ground cinnamon
- 2 tsp baking powder
- 1 tsp baking soda
- 1 tsp salt
Cream Cheese Frosting
- 1 pkg cream cheese
- 1/4 cup softened butter
- 1 tsp vanilla
- 1/2 pkg powdered sugar
Mix the eggs, sugar ,oil, and pumpkin in a medium bowl. In a large bowl combine flour, cinnamon, baking soda, and baking powder and whisk together. Add the wet mixture to the dry mixture. Grease a jelly roll pan and pour mix on it. Bake on 350 for 25 to 30 mins. Cool completely. For frosting, beat together your cream cheese and butter until light and fluffy, beat in sugar and vanilla. Frost Bars and cut. Put in fridge until ready to serve!
